CHOPT’s Mexican Caesar Dressing: VEGAN (or not)!

If you’ve ever tried CHOPT in New York, you know that all of their dressings are AMAZING. I actually didn’t discover their Mexican Caesar until I got onto TikTok, where I quickly realized it was a fan favorite. After much trial and error, I was able to recreate my ideal Mexican Caesar, dairy free. I think you’re going to love it - and if you’re not dairy adverse, you can absolutely use real cheese!

Ingredients

1C Mayo of Choice

2 Chipotles in Adobo + 2 tbs of the adobo sauce

Shortcut - if you have premade chipotle mayo, you can use 1 Cup of this in place of the mayo + chipotles in adobo!

1 Clove of Garlic, Chopped

1 Tsp Dijon Mustard

1 Red Chili Pepper, I used a fresno, seeds removed and chopped

1 Tbs Apple Cider Vinegar

3/4 Block of Vegan Feta + 1 Tbs of Nutritional Yeast OR 1 Cup Cotija Cheese

Salt, Chili Powder, and LOTS of black pepper

 

Method.

 

Step 1.

Place the mayo, chipotles and adobo, garlic, and spices (salt, PEPPER, and chili powder) into your blender, and blend until smooth.

Step 2.

Add in your chopped red pepper, cheese (+ nutritional yeast if you’re making the vegan version), and apple cider vinegar.

Step 3.

Blend again, this time only pulsing until incorporated. The little bits of cheese and pepper add texture, and make this more like the real thing!

This dressing stores nicely in the fridge! It might need a good stir but otherwise is perfect for saving. I love using this on salads, tacos, burrito bowls, with eggs in the morning, you name it!!
